[ndnSIM] How to trace Fib table?

Just to clarify.  The loggers nfd.* would work only in debug mode and are primarily designed for code debugging.  If you need tracing for measurement purposes, the you should add additional mechanisms (e.g., ns-3's tracedcallback).
