        We may have the same focus. Typically, you can utilize STK software to generate the trace file with description of the dynamic topology change events for your simulation. Then, you can write a program in ndnsim to dynamic change the LEO satellite network topology according to the aforementioned trace file. IMO, do remember to include these ground nodes when you simulating the topology.

                        I want to simulate an LEO constellation and UAV network in DNS.  I have found this  paper entitled  '<i><span style="font-size:13px;font-family:Arial,sans-serif">Liang, Teng, et al. "NDN in large LEO satellite constellations: a case of consumer mobility support." </span><span style="font-size:13px;font-family:Arial,sans-serif">Proceedings of the 8th ACM Conference on Information-Centric Networking</span></i><span style="font-size:13px;font-family:Arial,sans-serif"><i>. 2021 provides a</i></span> module to simulate
LEO constellations. They developed an external program to generate a series of topology snapshots consisting of the positions
of both satellites and ground users.
